Global spice trails — maps, stories, & culinary uses

Discover how spice routes shaped regional cuisines and how to bring seasonal, balanced spice combinations into modern dining.

Overview

Ronvika's Global Spice Trails project traces trade, migration and seasonal practices that shaped spice use across North Africa, South Asia, and Mediterranean markets. We present curated pairing guides and menu concepts for chefs and home cooks alike — emphasising fresh ingredients and balanced nutrition.

The research is practical: seasonal menus, gentle spice blends for family dining, and premium selections for restaurant experiences.

Seasonal ingredients & pairings

We emphasise bright, fresh produce combined with modest spice levels to support balanced nutrition. Below are quick pairing suggestions used across our menus.

  • Citrus + Coriander: fish, salads, and light broths.
  • Smoked paprika + Cumin: roasted roots and braises.
  • Cinnamon + Cardamom: stewed fruits and warming porridges.

Quick tasting notes

Conserve spice freshness: store whole where possible and grind on demand to preserve aromatic top notes.

Recipes & demo blends

Blend equal parts coriander, cumin, cinnamon, and fenugreek with a pinch of clove and black pepper. Rub on chicken, roast with preserved lemon and olives.

Lightly toast coriander, cumin, cloves, and cardamom; grind and add late to a tomato and root-veg stew. Finish with lemon and fresh coriander.

Combine dried thyme, sumac, sesame and sea salt; mix with olive oil for bread dipping or roasted veg garnish.
